My name is Kimberley Gimpel, and after fighting cancer twice in my life, I know firsthand how difficult the cancer journey can be.
The tests. The surgeries. The treatments. The uncertainty. The emotional and financial challenges. And the moments when you simply need to know that someone has your back.
That experience inspired me to create A Peace of Mind Charity with a simple purpose: to bring hope, support, and a little more peace of mind to cancer warriors in our community
How It All Began and How We’re Growing
After fighting cancer twice in my life, I know firsthand how difficult the cancer journey can be. I also learned that sometimes, it’s the little things, a kind gesture, a thoughtful gift, or simply knowing someone cares that can make a difficult day a little easier.
I started A Peace of Mind with a simple desire: to help people in our community going through cancer treatment feel a little more comfortable and cared for. It began with providing free hair hats and head coverings for women going through chemotherapy.
From there, I expanded the vision to include an online shop featuring clothing and meaningful items inspired by our mission, giving our community another way to show their support while helping raise funds for our cause.
That led me to create care packages and the Courage Box filled with thoughtful items meant to bring comfort, encouragement, and a reminder that no one should have to face cancer alone.
As the vision grew, I wanted to find more sustainable ways to give back. That led to the creation of A Peace of Mind Charity Café and Food Truck, where every coffee, meal, baked good, and catering order helps support our charitable mission.
Today, our mission comes to life in several ways.

Through A Peace of Mind Charity Café, our food truck, and catering services, we serve coffee, beverages, sandwiches, cakes, cupcakes, and other treats at our café and community events. We also cater weddings, graduations, celebrations, and special gatherings. Every purchase and every booking helps support our charitable mission.
Through A Peace of Mind Consulting, we use creativity and marketing to help businesses grow through video, graphic design, social media, and promotional services. The proceeds from these services help us continue giving back to those who need it most.
One of the programs closest to my heart is our monthly “A $550 Peace of Mind”, where we provide a $550 gift to a selected cancer warrior in our community. It is our way of saying, “You are seen. You are supported. You are not alone.”
What started from my own experience with cancer has become something much bigger—a community coming together to care for one another.
Every purchase helps. Every partnership makes an impact. Every act of kindness helps us create hope.
